This is the dish that I made up at the Nourishing Nosh cooking demonstration on November 3 at the Village Grocer.
This recipe closely resembles one that my uni friend Shaz gave me many decades ago now. It has been tried and tested for well over 2 decades now! Wow, how time flies. Shaz used tandoori spice in her recipe and I have since added in the fresh herbs and pumpkin. Thanx Shaz, think of you whenever I make these.
To convert to gluten free, simply substitute the bread crumbs with the gluten free type and use gluten free flour for coating. Please enjoy. You can play around with the spice combo here.
