Risotto is ready when it's ready, not when you are ready, so you need to be well prepared before starting.
Set the table. Prep your ingredients. Pull the risotto off the heat, just before it's perfect as it will continue to thicken and cook while you garnish it and get yourselves to the table.
The perfect risotto is not stodgy or soupy. The texture is creamy with separate grains of rice that have just lost their bite (maybe a minute past al dente - but of course this is a personal preference.)
