This salmon is succulent and bursting with flavour. Your fresh 1kg salmon fillet will be marinaded in organic maple syrup and fish sauce, then smoked to medium rare perfection over Genmaicha, star anise and cinnamon amongst others. It is delivered in one piece with a jar of house pickled onions, horseradish creme fraiche and a bag of baguette crisps.
Serves 10 - 20 as an appertiser, depends on whether you are serving with other dishes. (Weight decreases with smoking).
Pick up is in Seaforth on Christmas Eve. You are welcome to drop your platter in for presentation or your salad will be served on a eco disposable tray.
Order before 5pm Tuesday 20 December for the early bird discount.
Orders close 8am, Thursday 22 December. $150.
